The review

The White Rabbit brought serious cocktail culture to Uptown Waterloo and has never compromised on it. Set behind a handsome brick facade on King Street North, the room feels like an apothecary salon: dark woods, brass finishes, and backbar shelves stocked with rare whiskies, house-crafted tinctures, and seasonal amari.

The Canadian oyster program is pristine, shucked to order with crisp acidity from the house mignonette. The smoked rosemary Old Fashioned and botanical gin creations are prepared with technical precision and care.

Honest notes: weekends get bustling by 7:30pm, so arriving early for an afternoon cocktail or settling in post-dinner is the best move. The hidden back patio is one of Waterloo’s best kept secrets.

What to order

Must order

Fresh Canadian Oyster Platter

PEI and Malpeque oysters on crushed ice with shallot mignonette and house hot sauce.

Must order

Smoked Rosemary Old Fashioned

Bourbon infused over charred rosemary, orange bitters and demerara syrup.

Truffle & Parmesan Frites

Hand-cut russet fries, white truffle oil, shaved parmigiano and rosemary aioli.

What works

  • Cocktail mixology is easily the most sophisticated in the Waterloo Region
  • Raw oyster selection is flown in fresh weekly with proper shucking technique
  • Courtyard patio tucked behind King Street is a tranquil summer oasis

What doesn’t

  • Intimate room fills up rapidly on Thursday through Saturday evenings
  • No reservations for bar counter seating
  • Premium cocktail pricing reflects the artisanal technique
Verdict

Oyster dozen, smoked rosemary Old Fashioned, and a leather booth. Uptown Waterloo’s gold standard.
