Dim sum until 4am, ordered off a paper slip, exactly as it should be
Rol San solves a problem no one else in the city solves: it is 2am and you want dim sum. You tick boxes on a paper slip, the kitchen cooks to order, and ten minutes later there are steamer baskets on the table.
Har gow and siu mai are the standard, and the standard is met — translucent skins, prawn with actual snap. Beef rice noodle roll is the third order. Everything is cheap enough that over-ordering is the correct strategy.
Honest notes: service is brusque, the room is basic, and quality does soften at the very late end of the night. None of that is news to anyone who eats here, and none of it stops the place being full.
The benchmark. Skin translucent, prawn snapping.
Ordered in the same breath as the har gow, always.
Silky, slippery, drenched in sweet soy.
Har gow, siu mai, beef rice roll, at whatever hour. Over-order.
