Hand-folded northern dumplings in Chinatown, still the benchmark
Mother's Dumplings has been the answer to "where do I take someone for dumplings" for long enough that it risks being taken for granted. It should not be. The dumplings are still folded by hand on site, and the difference between that and a frozen bag is the entire point.
Order the pork and chive boiled — the plainest thing on the menu and the one that shows the work. Pan-fried pork buns are the other essential, crisp-bottomed and dangerously hot inside. If you want to eat beyond dumplings, the cumin lamb is properly northern and properly spiced.
Honest notes: it is cramped, there is often a wait, and service moves at the pace of a room that needs your table. Prices remain genuinely low, which buys a lot of forgiveness.

Crisp-bottomed, soupy inside. Wait for them to cool or accept the consequences.
The northern side of the menu, and a good reason to order beyond dumplings.
Pork and chive boiled, pan-fried buns, cumin lamb. Go off-peak.
