Drum-smoked jerk in Scarborough, cooked over pimento wood in a car park
Real jerk is smoked, not grilled, and the difference is a drum, pimento wood and several hours. Chris Jerk does it properly, in a car park off Markham Road, and the smoke reaches you before the sign does.
Jerk chicken is chopped to order with sauce spooned over, and the heat is not softened for anyone. Jerk pork is fattier and smokier and is usually gone by evening, so go early if that is what you want. Rice and peas, cooked with coconut, is not an optional side.
Honest notes: this is takeaway with a couple of seats. The pork sells out. The hours move around, so call before you drive. What comes out of that drum is worth the inconvenience.
Smoked in the drum, chopped to order, sauce on top. The whole reason.
Fattier, smokier, and better if you get there before it goes.
Coconut-cooked, and not optional.
Jerk pork if it is left, jerk chicken if it is not. Rice and peas either way.
